Rogan josh is an aromatic meat dish of Persian or Kashmiri origin. It is made with red meat, traditionally lamb or goat. It is one of the signature recipes of Kashmiri cuisine.

Ingredients:
Mutton : 500 gram
Hung curd (whisked) : ¾ cup
Khoya (grated) : ¼ cup
Almond (blanched & peeled, crushed to paste) : 15 gram
Asafoetida : 1 pinch
Saffron : 1 pinch
Cinnamon : 2 inch
Black cardamom : 3 pieces
Peppercorn : 6 pieces
Red chilli : 3 pieces
Fennel seed (powdered) : 3 teaspoons
Coriander powder : 1 tablespoon
Red chilli powder : 1 teaspoon
Cumin seed : 1 teaspoon
Ginger powder : 1 teaspoon
Garam masala powder : ¼ teaspoon
Kewra essence : 2 ml
Mustard oil : ¼ cup
Water : 1 cup
Salt : as per taste
Additional (for garnish) : coriander leaves (chopped)
Instructions:
In a large-bottomed pan, heat mustard oil on medium flame.
Add asafoetida, cumin seeds, cinnamon, cloves, peppercorns, cardamoms and whole red chillies.
Saute all the spices in the pan on low flame. Add mutton pieces and cook on medium flame for 10 minutes.
Now add some water and cook covered.
When the pieces are soft and cooked half way, add all ground spices along with saffron and mix well. Cook covered for 2-3 minutes.
Add salt along with whisked hung curd and cook for about 3 minutes.
Add the garam masala powder, grated khoya, almond paste and kewra water.
Cook the mutton on low flame till it is tender.
Garnish it with fresh coriander leaves.
Serve hot with naan or rice.
