Malai Kulfi is a delicious summer treat. Made with simple ingredients, this eggless Indian ice cream is flavored with cardamom, dried milk solids and nuts.

Ingredients:
Milk : 1 litre
Heavy whipping cream (malai) : ½ cup
Khoa (mawa) : 2 tablespoons
White sugar (granulated) : ⅓ cup
Green cardamom seeds (powdered) : ¼ teaspoon
Almond (sliced) : 4-5 pieces
Pistachio (sliced) : 4-5 pieces
Rose water : 1 tablespoon
Additional (for garnish) : saffron strands
Instructions:
Take milk in a saucepan or wide pan. Bring the milk to a boil on medium heat. Do stir frequently.
Once it come to a boil, make the heat to medium-low. Let it cook with stirring occasionally until it becomes ⅓ of original volumes.
Add sugar and khoa. Mix well and simmer till they are melted.
Then turn off the stove heat.
Add heavy whipping cream, cardamom powder, almonds, pistachios and rose water. Mix well.
Let it cool completely. It will get thicker as it cools.
Once it is cooled to room temperature, pour into moulds or popsicle molds. Cover it with a lid or aluminum foil.
Let it set overnight in freezer or until it is firm, frozen and set.
To remove the kulfi from the mould, dip it into warm water for 1-2 seconds only, it will come out very easily.
Garnish malai kulfi with some saffron strands and chopped nuts like pistachios or almonds.
